Grammy's Chocolate Cookies: How did it go?

I have just returned from one of the most beautiful place in UK I have been, so far.


The chocolate cookies for the host lady - worked wonderfully=) Although the cookies were not perfect. They still tasted good and did what they were suppose to do. Honestly, although everyone did compliment them, I am pretty disappointed with myself cause I know it could have been better. I did not cream the butter and sugar properly, unfortunately.

There will be a next round then.


Ingredients:
-2 cups all-purpose flour
-1 cup cocoa powder (original recipe calls for Dutch, but I didn't use and neither did Kim)
-1 tsp baking soda
-1/2 tsp salt
-1 1/4 cup unsalted butter, room temperature
-1 1/2 cups sugar (original recipe called for 2 cups, but Kim said they were too sweet)
-2 large eggs
-2 tsp pure vanilla extract
-1 cup of nuts (walnut, cashew, groundnut, pine nut..etc...)

Directions:
1. Sift together flour, cocoa powder, baking soda, and salt. Add in nuts. Set aside.
2. Cream butter and sugar until white, light and fluffy with a mixer on medium speed (or use whisk) then mix in eggs. Add vanilla and mix to combine.
3. Gradually add dry ingredients and combine with mixer on low speed. DO NOT OVER BEAT. Cover bowl with plastic wrap and chill at least 1 hour, until dough is firm.
4. Roll dough into 1-inch balls and dip the top of each ball in granulated sugar. Place on non-stick baking sheets and bake for 8 min at 350F. Cool for 5 minutes on baking sheet before cooling completely on wire baking racks.
